Bread Flour: I love using unbleached King Arthur bread flour. You can use all-purpose flour, but bread flour gives a higher, airier loaf, perfect for sandwiches.
Sugar: Use granulated sugar or substitute with honey for a slightly sweeter taste.

How to Make Sourdough Sandwich Loaf Bread
This recipe is super simple with only a few steps. Start it on Saturday and by Sunday evening you’ll have freshly baked bread ready for sandwiches during the week!
Mix the Dough:
Start to feed your starter 12-24 hours before beginning.
Next in a large bowl, mix the starter with warm water, then add flour, sugar, oil, and salt. A dough whisk works well for mixing!
Form a shaggy, sticky dough, then cover the bowl with a damp towel and let it rise for 30-45 minutes.
Coax and Fold:
Take the dough from the bowl onto a lightly floured surface. Do a series of stretches and folds to build that lovely gluten structure.
Overnight Sourdough Fermentation Process
